Ginger-Lime Mango Salsa

am really not a fan of ginger -- I think it tastes like Windex -- however, paired with lime, some red onion, and some honey, I thought the other flavors would shine through a bit more. After adding a generous helping of salt, all the flavors came together quite nicely. This one is much easier since there is no cooking or food processing involved.

1 mango, diced
1 red onion, diced
8-oz. peaches, diced
1/2 cucumber, diced
1 tsp. mint, finely chopped
2 tbsp. honey
The juice of 2 large limes
2 tsp. granulated ginger
Generous helping of salt

Dice all of the ingredients to a uniform size.
Combine everything in a large bowl and let sit, so all the flavors can absorb
Tip: Instead of using tortilla chips, try some baked cinnamon chips!
