These flourless Glazed Honey Bun Breakfast Cookies are sweet, healthy, and satisfying! They are a perfect clean eating breakfast or snack on-the-go, and they also happen to be gluten-free, dairy-free, and full of fiber, protein, and healthy fats. 1 (15.5 ounce) can chickpeas, drained and rinsed
½ cup almond butter, peanut butter, or sunflower seed butter
? cup oats
¼ cup pure maple syrup (or honey)
¼ teaspoon sea salt
1 teaspoon baking powder
1 teaspoon cinnamon
¼ teaspoon nutmeg
Optional: ½ cup cinnamon chips (white chocolate chips would also taste great!)
For the Honey Glaze:
2 tablespoons butter
¼ cup honey
½ cup almond butter, peanut butter, or sunflower seed butter
? cup oats
¼ cup pure maple syrup (or honey)
¼ teaspoon sea salt
1 teaspoon baking powder
1 teaspoon cinnamon
¼ teaspoon nutmeg
Optional: ½ cup cinnamon chips (white chocolate chips would also taste great!)
For the Honey Glaze:
2 tablespoons butter
¼ cup honey
Preheat oven to 350 degrees F.
Combine first 8 ingredients in food processor and pulse until dough forms.
Gently fold in cinnamon chips, if desired.
