Glazed Lime Cookies
144
When my husband and I very first moved to the South, we made these cookies, only with lemon instead of lime. They have been a favorite ever since. People always ask for the recipe.

Cookies:
2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 Tablespoon grated lime zest
2 Tablespoons lime juice
1/2 cup unsalted butter, room temperature (when I don't have time to soften it, I usually grate the butter)
1 cup white sugar
1 large egg
1 teaspoon vanilla
Glaze:
1 cup powdered sugar
1 Tablespoon lime zest
2 Tablespoons plus 2 teaspoons lime juice
2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 Tablespoon grated lime zest
2 Tablespoons lime juice
1/2 cup unsalted butter, room temperature (when I don't have time to soften it, I usually grate the butter)
1 cup white sugar
1 large egg
1 teaspoon vanilla
Glaze:
1 cup powdered sugar
1 Tablespoon lime zest
2 Tablespoons plus 2 teaspoons lime juice
Preheat oven 350 degrees. Combine butter, sugar, eggs and vanilla. Add lime juice and zest. Mix, then add dry ingredients. Roll into walnut sized balls. Bake 15-20 minutes, or until barely golden. Let cool for 2 minutes then transfer on rack or counter tops. Mix glaze together. Glaze cooled cookies by dipping tops of cookies into glaze Let it set for at least 30 minutes for best flavor. Can substitute lime with lemon or orange. Enjoy! Makes 3 dozen.
