Gluten Free Egg Roll Wrappers (works well for Samosas and Pizza too!)

Our family LOVES egg rolls but it's tough to find options that are gluten-free, so I make my own wrappers. These taste more dense than the real thing, but for someone with a gluten allergy they work great and get the job done just fine!

1C Bob's Red Mill gluten-free all-purpose flour
A little extra flour for kneading/rolling
1 Tbsp xanthan gum
6 Tbsp water
2 large eggs
Minimal olive oil on pan to prevent sticking
Mix flour and xanthan gum in a bowl Add water and eggs to dry ingredients and mix On a lightly floured surface, gently kneed dough until it sticks together Press dough flat with fingers or use a rolling pin to roll flat Fill with your favorite filling and place on a lightly oiled baking sheet Bake at 425F for 15-20min, flipping half way through cooking Important note: this can be a difficult dough to work with!!! Be sure it remains slightly wet or the dough will crack when you are adding your filling.
