Cookies for breakfast? You heard me right! This is an awesome adaptable recipe packed with healthy ingredients! The beautiful thing about this recipe is that you can swap any of the dry ingredients for other dry ingredients. If your kids don’t like dried blueberries, throw in some chocolate chips instead.

1 1/2 cups gluten free oats
1 cup unsweetened coconut flakes
1 tbsp golden flax meal
pinch sea salt
3/4 cup coarsely chopped pecans (or other nuts)
1/2 cup dried cranberries or chocolate chips
3 very ripe bananas mashed
1/4 cup coconut oil, warmed
1 tbsp honey
1 tsp vanilla extract
1 cup unsweetened coconut flakes
1 tbsp golden flax meal

3/4 cup coarsely chopped pecans (or other nuts)
1/2 cup dried cranberries or chocolate chips
3 very ripe bananas mashed
1/4 cup coconut oil, warmed
1 tbsp honey
1 tsp vanilla extract
Preheat oven to 350*. Combine oats, coconut, flax, salt, pecans and blueberries in a bowl. Stir in banana, oil, honey and vanilla.
