Greek Quinoa Salad – a light and refreshing, protein and fresh veggie packed Greek Quinoa Salad with an easy red wine – oregano dressing; perfect for any meal!

1 cup quinoa
2 cup veggie broth
1 can garbonzo beans, drained and rinsed
3 cups baby spinach
1 cup chopped red onion
1 cup Kalmata olives, halved
1 large cucumber, halved and sliced
1 pint grape tomatoes, halved
1 cup feta cheese crumbles
Dressing
1/3 cup olive oil
1 tsp garlic powder
1 tsp dried oregano
1 tsp dried basil
1 ½ tsp Carrie’s Seasoning
¼ tsp onion powder
¾ tsp Dijon-style mustard
½ cup red wine vinegar
2 cup veggie broth
