The feature of Greek style roasted lamb is the use of spices thyme and cinnamon. Served with sweet roasted vegetables and crisp pita full of wheat aroma, this dish is the choice of an energetic weekday meal as well as a holiday party treat!

1 lb. lamb (shank)
1 tsp. thyme (dried)
1/8 oz. cinnamon (in stick or ground)
2 cloves garlic
1 T. dry white wine
1 tsp. sea salt
1 tsp. black pepper (ground)
1/4 oz. lemon peel
1/4 oz. coriander
1/2 tsp. chili powder
2 oz. onion
12 oz. tomato
