Grilled Fish Fillet Sandwich

Yummy grilled fish fillet between two slices of wholemeal breads!

For grilled fish fillet:
1 fish fillet of your preference
1 tablespoon of extra virgin olive oil
Kosher salt to taste

For one sandwich:
1 tablespoon fresh lemon juice
1 tablespoon of vegetarian mayonnaise
1/4 teaspoons Dijon mustard
2 slices of wholemeal bread
4 romaine lettuce leave (medium sized)
2 tomato slices for each
1. Brush olive oil on the fish fillet and sprinkle some salt to taste. 2. Grill it until it turn golden brown for 4-5 minutes each side. 3. For the sandwich, toast two wholemeal breads until golden brown. 4. Spread the vege mayonnaise and Dijon mustard on both sides. 5. Top the bread with Romaine lettuce, tomato slices and the fish fillet. 6. Drizzle fresh lemon juice on the fish. Cover with another slice of bread. 7. Enjoy :)
