Cheesy vegetarian grilled mushroom quesadillas

1 large onion, diced
5 cloves of garlic, minced or finely diced
8 oz organic white mushrooms, chopped
1 teaspoon cumin
¼ teaspoon smoked paprika
½ teaspoon dried cilantro
½ teaspoon chili powder
¼ teaspoon cracked black pepper
½ teaspoon sea salt
1 tablespoon olive oil
