Think buffalo chicken w/ celery & carrots, dipped in ranch or blue cheese dressing and now reconstruct that into a sandwich

1 T olive oil
1 lb ground chicken (or turkey)
1 carrot, shred with a peeler and chopped
1 celery stalk, chopped finely
3 T Frank’s Red Hot (adjust amount for your taste this was fairly mild)
¼ C prepared ranch or blue cheese dressing
½ C shredded sharp white cheddar cheese
8-12 slider buns or 4-6 regular sandwich buns
