Guacamole Cauliflower Rice

Turn cauliflower into "rice" using a food processor and enjoy a low carb, low calorie, veggie-filled meal. Serve as a side or toss with mixed greens and/or chicken.

•1 ripe large avocado, pitted and mashed
•Juice of 2 limes
•1/4 tsp salt
•1 head of cauliflower (about 6 cups, riced)
•3 garlic cloves, minced
•1/2 of a ripe large avocado, pitted and diced
•1/2 cup red bell pepper, diced
•1 large tomato, diced (exclude, if on the Conscious Cleanse)
•1 jalapeno pepper, seeded and minced (I added a few seeds in for a little kick.)
•1/2 cup fresh cilantro, chopped
•1/2 cup red onion, diced
•1/2 tsp ground cumin
•1/8-1/4 tsp cayenne (optional)
