I changed this recipe slightly by increasing the vanilla and substituted the 1/4 cup sugar with 1 tablespoon honey. I prefer a much less sweet tasting muffin. I think they taste wonderful!

1 cup Natural Peanut Butter
2 Large Ripe Bananas
3 Eggs
1/4 cup Almond Milk
1 Tablespoon Vanilla
1 Tablespoon Honey
3/4 Teaspoon Baking Soda
1/4 cup + 2 Tablespoons Coconut Flour
2 Large Ripe Bananas
3 Eggs
1/4 cup Almond Milk
1 Tablespoon Vanilla
1 Tablespoon Honey
3/4 Teaspoon Baking Soda
1/4 cup + 2 Tablespoons Coconut Flour
In food processor mix peanut butter, almond milk, vanilla, eggs, and mashed bananas. In a separate bowl combine dry ingredients. Add wet ingredients and mix thoroughly. Place batter in lined muffin tins and bake at 350 degree oven for 20-25 min.
