Hashbrown Breakfast Cupcakes are the perfect side to any breakfast meal! Take these to a family event or just whip them up for your table, both are fantastic!
3-4 red potatoes
1 small yellow onion, finely chopped
1 bell pepper, finely chopped
1 small jalepeno, finely chopped
1 garlic clove, minced
1 cup shredded cheddar cheese
2 eggs, beaten
Organic sour cream
1 medium avocado, pitted, peeled and sliced (optional for topping)
Fresh cilantro leaves (optional for topping)
