Hawaiian Haystack Casserole

A twist on the classic Hawaiian Haystacks now in an easy casserole form. A crowd pleasing dinner!

1 cup white or brown rice + water
2 boneless skinless chicken breasts (about 1 and ½ cups)
4 tbsp. unsalted butter
4 tbsp. all-purpose flour
2 chicken bouillon cubes + 2 cups water (or 2 cups chicken broth)
¼ tsp. pepper
½ tsp. salt
¼ tsp. garlic salt
¼ cup plain Greek yogurt (or sub light sour cream)
¾ cup cheddar cheese, shredded
Toppings of choice such as: black olives, cherry tomatoes, crispy chow mein noodles, drained crushed pineapple, green onions
