Healthy Breakfast Waffles

Yumm! The perfect breakfast. Waffles with homemade syrup (see my homemade blueberry syrup recipe) . Delicious and healthy! The perfect combination to start off a brand new day.

2 eggs, beaten
1 3/4 cups skim milk
1/4 cup canola oil
1 teaspoon vanilla extract
1 cup whole wheat flour
1/2 cup Buckwheat flour
1/2 cup flax seeds (ground)
4 teaspoons baking powder
1 tablespoon sugar
1/4 teaspoon salt
1.In a large bowl mix the eggs, milk, oil, and vanilla, 2. Beat in (by hand) whole wheat flour, buckwheat flour, flax seed meal, baking powder, sugar and salt until the batter is smooth. 3.Preheat the waffle maker and coat with cooking spray. 4. Pour batter into waffle iron (in batches) and cook until golden brown Tip: pour homemade blueberry syrup on top once waffles are cooked for a deliciously perfect result. *** See my recipe.
