This is a comfort Food Recipe with some meat but a whole lot of veggies and quinoa. It’s nutritious and protein packed but light on calories and high in flavor. The recipe makes enough for 6 people but it will keep in the fridge for a week or you can even freeze it in a freezable container for about 6 weeks.
