Healthy Double Chocolate Zucchini Bread

A decadent, not-too-guilty recipe for a breakfast treat!

3 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1 tbsp. cinnamon
1 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1 1/2 cups sugar
3 eggs
1 cup applesauce
2 tsp vanilla extract
2 cups zucchini, shredded
1 cup chocolate chips
1/4 cup unsweetened cocoa powder
1 tbsp. cinnamon
1 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1 1/2 cups sugar
3 eggs
1 cup applesauce
2 tsp vanilla extract
2 cups zucchini, shredded
1 cup chocolate chips
Preheat oven to 350 degrees.
Grease 1 regular size loaf pan or 4 small loaf pans.
In a large bowl, stir together the dry ingredients. Set aside.
In a separate bowl, beat together the eggs and sugar. Add the applesauce, zucchini and vanilla and stir until well combined.
Add the wet ingredient mixture to the dry ingredients along with the chocolate chips.
Stir just until flour is no longer visible; avoid over-stirring.
Pour into prepared loaf pan(s).
Bake: 55-60 minutes for regular size loaf; 25-30 minutes for mini loaves.
To test doneness, insert toothpick into center of loaf; when removed the toothpick should be dry with no batter sticking to it.
Let cool in pan(s) for 8-10 minutes. Remove from pan(s) and place on cookie rack to complete cooling.
