Healthy Lemon-Blueberry Muffins

These delicious blueberry muffins are really healthy. They are made with buckwheat and wholewheat flour and also have flax seeds. They are low in sugar and fat. These muffins are fantastic, easy to make and delicious! With these muffins you can give in to your sweet tooth without feeling guilty!

1 cup of whole wheat flour
2 tablespoons ground flaxseeds
1/2 cup buckwheat flour
8 tablespoons granulated sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
1/4 cup butter, melted
1 large egg
1/2 cup low fat butter milk
1/2 cup skim milk ( you may use 2% milk instead)
1 teaspoon grated lemon rind
1 teaspoon fresh lemon juice
2/4 cup fresh or frozen blueberries , thawed
2 tablespoons ground flaxseeds
1/2 cup buckwheat flour
8 tablespoons granulated sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
1/4 cup butter, melted
1 large egg
1/2 cup low fat butter milk
1/2 cup skim milk ( you may use 2% milk instead)
1 teaspoon grated lemon rind
1 teaspoon fresh lemon juice
2/4 cup fresh or frozen blueberries , thawed
1. Preheat oven to 350 degrees.
2.Place muffin cup liners into muffin tray and grease with cooking spray.
3. Put 1 cup 1 tablespoon of ground flax seed, 1/2 cup buckwheat flour, granulated sugar,l baking powder, salt and baking soda into a large bowl.
4.Stir to combine all dry ingredients.
5.combine melted butter and egg in another large bowl and stir with a whisk.
6. Add buttermilk, milk, lemon rind and lemon juice to butter mixture and then add to flower mixture, stirring until moist.
7. Toss blueberries with remaining 1 tablespoon flax seed.
8. Fold the blueberries into batter.
9. Spoon batter into prepared muffin cups.
10.Bake at 350 degrees for 25 minutes or until metal or wooden pick is inserted and comes out dry.
11. Cool before serving.

TIP: if you do not have buckwheat flour or flax seeds you can replace it with any other type of flour.
