Healthy Mexican Lasagna

This is a lightened up version of regular Mexican Lasagna. You probably wouldn\\\'t even be able to taste the difference! Who doesn\\\'t love Mexican food?

cooking oil spray
6 corn tortillas, cut into quarters
1 large egg
1/4 cup milk
1/4 cup plain Greek yogurt (could also use sour cream)
1 cup mild chunky salsa
1 pound chicken breast, cooked and shredded
2 tablespoons fresh cilantro, chopped
3 scallions, chopped
1 teaspoon kosher salt
2 cups mexican cheese blend, divided
