Healthy Rustic Panzanella

Salad is a struggle. I like it, but not all the time. There are so many delicious salad recipes, but then you look at the ingredients and to make it taste good you’ve added so many calories you should probably just go eat the burger you really want and call it a day. But then I found panzanella. It’s unbelievably refreshing and versatile.

1 cucumber, sliced
1 cup heirloom tomatoes, chopped
1/2 red onion, sliced
1 small loaf of French or Italian bread, cubbed
8 oz. mozzarella
8-10 basil leaves, torn
olive oil
salt and pepper to taste
