This is the perfect make ahead breakfast! Today I present to you a fantastic healthy bacon muffin recipe. They are gluten free, protein packed, low in calories, low in carbs and they are great for kids.

12 muffins
1/2 cup of coconut flour
1/4 cup of almond flour
6 large eggs
1/4 cup of vegetable oil
3/4 cup of almond milk
5 g of fresh chives chopped
150 g of bacon ( fat trimmed and finely chipped )
3/4 cup of baking powder
25 g of grated cheddar cheese
