A delicious, healthy version of meatloaf that is perfect for a weeknight dinner or fancy enough for company.

1 1/2 cups chopped onion
3 minced garlic cloves
1 teaspoon olive oil
1 medium diced carrot
3/4 pound cremini mushrooms, trimmed and finely chopped in a food processor
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 teaspoons Worcestershire sauce
1/3 cup parsley, finely chopped
1/4 cup plus 2 tablespoons ketchup
1 cup fine bread crumbs
1/3 cup almond milk
1 whole large egg, lightly beaten
