Hobo Supper

321

This was a recipe of my Papa Jack's. I have no idea why he called it hobo supper. I also have no idea what hobo would be able to get his hands on so much meat. Despite the name, this dish is delicious and incredibly easy to make.

8
1 Pound Lean Ground Beef Made into Thick Patties
1 Pound Boneless Chicken Breasts
8 Medium Potatoes Peeled and Quartered
1 pound of baby carrots
1 Green Pepper Cut Into Strips
1 Medium Onion Cut Into Wedges
6 Slices of Bacon
1 Medium Head of Cabbage Cut Into Wedges
1 Packet of Lipton Onion Soup Mix
Salt, Pepper, and Garlic to Taste
Preheat oven to 350 degrees. Line a 10x16 3 inch deep baking dish (disposable works fine) with foil. Layer the meat on the bottom of the pan. Sprinkle 1/2 of onion soup packet over top. Next layer potatoes, carrots, pepper, onions, then cabbage. Sprinkle the remaining onion soup mix over top. Wrap the entire dish tightly in foil. Bake for 3 hours, do not open the foil. You don't need to check on this recipe. The chicken and beef will appear slightly pink but both will be done, check with a meat thermometer if you're unsure.
