Homemade Cajun Seasoning: Small Scale

Sometimes a recipe calls for an herb or spice mix, such as “Cajun Seasoning.” Not only are these seasoning mixes expensive, but they also often contain unwanted ingredients such as preservatives and artificial flavor enhancers. Recipes for homemade mixes are helpful, but they may produce a great quantity that needs to be stored. Sometimes it is desirable to have a recipe on a smaller scale for mixes you use less often. This recipe for Cajun Seasoning yields 2 tablespoons.

1 1/2 tsp paprika
1 tsp salt
1 tsp garlic powder
1/2 tsp black pepper
1/2 tsp dried minced onion or onion flakes
1/2 tsp oregano
1/4 tsp cayenne
1/4 tsp thyme
1/4 tsp cumin
1/4 tsp crushed red pepper flakes
