Homemade Caramel Popcorn

This easy and delicious recipe for caramel popcorn makes enough for a party, so I suggest if you want less reduce it by half. I used the microwavable type of popcorn to make this recipe, 5 quarts.

1 cup Butter
2 cups Light Brown Sugar
1/2 cup Light corn syrup
1 teaspoon salt, omit this if using salted butter
1/2 teaspoon baking soda
1 teaspoon vanilla
20 cups popped popcorn

Preheat oven to 250F.
Place popcorn in a very large bowl. In a medium saucepan over medium heat, melt butter.
Stir in brown sugar, corn syrup, and salt (if using). Bring to a boil, stirring constantly.
Boil without stirring for 4 minutes; remove from heat and stir in baking soda and vanilla.
Pour over popcorn, stirring to coat every single popcorn.
Place caramel popcorn in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes for 1 hour.
Remove from the oven and let cool completely then break into pieces. DONE!!!!!!
