Homemade Instant Cappuccino Mix - White Chocolate Caramel

One of my favorite cold weather treats is a nice hot cup of cappuccino. I keep it quick and simple with some instant cappuccino mix, but buying it from the store gets expensive, and there's an awful lot of sugar in the stuff from the store! I set out to make my own instant mix instead, and this recipe, while not exact, is close & a super simple substitute for the store-bought kind! 1-1/3 cups caramel flavored nondairy creamer
1/2 cup + 2 Tablespoons instant nonfat dry milk
1/2 cup + 2 Tablespoons finely grated white chocolate
1/4 cup sugar
2 Tablespoons finely ground instant coffee granules
1 rounded Tablespoon cocoa powder
1 teaspoon salt
1/2 cup + 2 Tablespoons instant nonfat dry milk

2 Tablespoons finely ground instant coffee granules
1 rounded Tablespoon cocoa powder
1 teaspoon salt
Combine all ingredients, stirring till everything is evenly mixed. Store in an airtight container.
To use: Measure about 3 Tablespoons of the mix into your mug. Add 6-8 oz of hot water, and stir till the mix is dissolved.
Recipe notes: I grind up the instant coffee granules in the blender (a coffee grinder or food processor will also do the trick) just to keep the granules about the same size as the other powder ingredients. This is optional - you can measure the coffee straight out of the jar if you prefer. I also run the chocolate through the blender to grind it up to smaller particles as well. Do this in very small batches and pulse the chocolate just enough to get most of it very fine - a few bigger pieces aren't going to be a problem. You can also just use a box grater to grate the chocolate but the blender is faster.
The measurements for this recipe do not have to be exact. Make other flavors simply by substituting different flavors of creamer. I've made this with a couple different kinds of caramel creamer, and it's tasted slightly different with the different kinds. I prefer it made with a vanilla caramel flavored creamer, but it's also really good with caramel macchiato flavored creamer. It's also awesome with peppermint mocha flavored creamer (I use milk chocolate instead of white chocolate), you can use chocolate creamer, vanilla etc. Play around with it a bit - there are loads of possibilities!
