Homemade Strawberry Fruit Snacks

1 1/2 cups of fresh or frozen (organic) strawberries
1 1/2 cups of water (or you can use 1/2 water and 1/2 organic apple juice)
1/4 cup of honey (OR 1/2 cup sugar)
1/2 cup of gelatin
1 1/2 cups of water (or you can use 1/2 water and 1/2 organic apple juice)

Add berries, water, and honey (or sugar) to the pan. Bring to a boil so that the honey/sugar dissolves. Pour the mixture into a blender (or you can use an immersion blender). Blend until smooth. Pour back into the pan and simmer. Skim any foam off the top so that the mixture is not foamy but clear.
Turn off the heat and SLOWLY add the gelatin while whisking so that you don't get clumps. Pour the gelatin into molds, or you can pour it straight into a Pyrex dish (grease it a little bitt with coconut oil to make it easier to remove later).
Place in the freezer or fridge to cool. Once they are chilled you can easily pop them out of the silicon molds or slice the gelatin in the Pyrex dish into cubes or use small cookie cutters and pop them out. Then Enjoy!
