Homemade Vegetable Broth from Leftovers

A couple of years ago, I realized how bad I could be at using all of the produce I bought. I hated having to throw out fresh fruits and vegetables that had gone bad in my refrigerator. I decided to make the most of that loss by making my own vegetable stock. Now, whenever I know I won't be able to eat a vegetable before it goes bad, I chop it up, put it in a 1 gallon freezer bag, and freeze it. I also freeze trimmings from my vegetables (like the long stem on broccoli).
