Honey Glazed Carrots

A classic french side made super easy. The oven does the majority of the work. Toss the immediately out of the oven with honey and a bit of lemon juice.

10-12 large carrots, peeled, cut into half and then quartered if really thick
1 tbsp extra virgin olive oil
salt and pepper
1 tbsp honey
1 tsp lemon juice
Preheat the oven to 425. Toss the carrots with olive oil, salt and pepper. Arrange in a single layer on a baking sheet. Bake for 30-35 minutes or until a knife inserted through the center goes in easily....
