Honey Glazed Salmon Endive Salad – sweet honey baked salmon combines perfectly with slightly bitter endives, radishes and red lettuce. Combined with a zesty lemon oil dressing. Yum!

100 g salmon fillet
1 tbsp honey
1 tsp olive oil
100 g small new potatoes
1 small endive head
1 small handful lollo rossa or red lettuce
30 g radishes
Dressing:
1 tbsp olive oil
1/2 small lemon, juice and zest
