Honey Roasted Carrots

2 lbs carrots peeled and cut into 2 inch chunks
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
3 tablespoons butter
3 tablespoons honey
1/8 teaspoon ground cayenne pepper
1/2 tablespoon fresh thyme
  1. Preheat oven to 425 degrees.
  2. In a large bowl stir together the carrots and olive oil. Sprinkle with the salt and pepper. Place them on a large baking sheet covered.....
