Fudgy hot-cocoa flavored cookies with chocolate chunks and a peppermint glaze. Garnished optionally with candy cane crumbs.

Hot Chocolate Cookies
¾ cup white sugar
1 cup brown sugar, packed
1 egg + 1 egg yolk (reserve the whites for another recipe if desired)
1 cup butter-flavored shortening
1 and ½ tsp. vanilla extract
1 tbsp. vegetable oil
1 and ¾ cup all-purpose flour
1 tsp. cornstarch
¼ cup cocoa powder
1 packet hot chocolate mix
1 and ½ tsp. baking powder
rounded ½ tsp. salt
2 cup semi-sweet chocolate chunks (Nestle)
Peppermint glaze:
¼ cup butter, softened
1 ounce cream cheese, softened
1 and ? cup powdered sugar
½ tsp. peppermint extract
Optional garnish: 1 candy cane, unwrapped

In a large bowl, combine both the white and brown sugars and eggs.
With a hand mixer beat for about 30-45 seconds. Add the shortening, vanilla, and vegetable oil and beat until well combined.
