These huevos rancheros are great for breakfast, but we enjoy them most often as a hearty, satisfying evening meal. Topped with beans, cheese, salsa and sour cream, they are truly "breakfast after dark" comfort food.

3 tablespoons I Can't Believe It's Not Butter!, divided
1/2 cup chopped onion
1 teaspoon chopped chipotle pepper in adobo
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1 (15 oz.) can fire-roasted, diced tomatoes
1 (4 oz.) can diced green chiles
1/2 cup water
Salt and pepper, to taste
6 small flour tortillas
8 large eggs, beaten
Additional Toppings:
Chopped fresh cilantro
Black beans
Sour cream
Shredded cheese
Avocado
