India easy to make Spinach and Cheese Pancakes by neharika

Wholesome wheat flour pancakes are filled with a toothsome mixture of spinach, tomato and cheese mixture. The creamy cheese and the tangy tomato help transform healthy spinach into a scrumptious treat that no kid can resist. The use of wheat flour for the spinach and cheese pancakes ensures a good dose of protein and fibre too, along with the iron and vitamin boost in the filling. All the more reason to like this tasty treat!

1/3 cup whole wheat flour (gehun ka atta)
1/3 cup plain flour (maida)
1/3 cup milk
2 tbsp melted butter
salt to taste
butter or for cooking
2 onions , chopped
2 garlic (lehsun) cloves , chopped
1 cup chopped spinach (palak)
2 large tomatoes , chopped
1/2 cup grated processed cheese
2 tsp butter
salt to taste
Mix all the ingredients with 1 cup of water to make a smooth batter. Heat a 5inch diameter non-stick pan, pour a ladleful of the batter and tilt the pan around quickly so that the batter coats the pan evenly. Cook the pancake on each side for 30 seconds approximately. Repeat for the remaining batter to make a 8 pancakes, greasing the pan with butter, if required. For spinach and cheese filling Heat butter in a pan, add the onions and garlic and saute for 2 minutes. Add the spinach, tomatoes and salt and cook for a further 5 minutes. Remove from the fire and add the grated cheese. Mix well. How to proceed Spoon 2 tablespoons of the spinach and cheese filling into each pancake. Fold each pancake into half and serve immediately.
