This is yet another maharashtrian recipe.

1 large baingan (brinjal)
1 chopped medium sized onion
1 chopped medium sized tomato
1/2 tsp. green chilli chopped
1/4 tsp. red chilli powder
2 tbsp. oil
1 tsp. ginger garlic paste
1 tbsp. crushed groundnuts
salt – to taste

Roast the brinjal on a medium flame till well cooked and the skin has charred completely.
Now cool, peel and mash it.
Add salt and red chilli powder to it and mix well.
Heat oil in a pan and add ginger garlic paste and saute.
Now add chopped green chilli, onion and tomato to it and saute till onion becomes light pinkish in colour.
Now add mashed brinjal mixture to it and mix it well.
Cook it for 2 more minutes and put off the flame.
Close the lid and keep it aside for 5 minutes.
Garnish with chopped coriander and serve hot with chapati.
