Kumquat Crab Tower

16 kumquat
1 cup crab meat
½ avocado
2 cherry tomatoes
1 cup crab meat
½ avocado
2 cherry tomatoes
Cut the kumquat into quarters, remove seeds.
Slice avocado into thin half-moon slices.
Cut tomatoes into halves.
Finely chop the kumquat in a food processors. Add the crab meat and mix. (You may do this manually with a knife too.)
Place a cookie cutter on a serving plate, fill with crab mixture, press in tight with a spoon.
Remove the cookie cutter, top the tower with avocado slices.
Put half a cherry in the center of the avocado topping.
