Lebanese Artichoke Salad

This salad is packed full of flavor and nutrients! Who knew that eating healthy could taste so good?

2 cups spinach
1 artichoke, or 1 can artichoke hearts
1/2 a tomato, cut
5 Brussels sprouts
1 TBS oil
1 chicken breast, (optional)

Dressing:
1 garlic clove (or 1/2 tsp garlic powder)
1/2 tsp black pepper
1/2 tsp salt
2 TBS fresh lemon juice
3 TBS olive oil
If using a fresh artichoke, cook before hand (by boiling for 45-50 minutes, or grilling until soft). Remove the leaves (and eat! Maybe as your appetizer? Yum!) and dice the heart into 1/2 inch pieces. Heat...
