Leftover Fried Rice

This is a great recipe for incorporating leftovers into a new recipe. Use those veggies, rice and cooked meats from past meals and give them new life!

-2 TBSP Vegetable or Olive oil
-1/4 Cup Onions
-1 clove minced garlic
-6 cups cooked rice
-1/2 cup soy sauce
-2 cups frozen or leftover veggies of your choice (we like peas, carrots, mixed veggies, etc.), thaw if frozen.
-4 large eggs, beaten
-1-2 cups cooked meat (chicken, pork, steak, or whatever you have in the frig leftover!) - optional
-1/4 Cup Onions

-6 cups cooked rice
-1/2 cup soy sauce
-2 cups frozen or leftover veggies of your choice (we like peas, carrots, mixed veggies, etc.), thaw if frozen.

1. Cook rice as directed if you don't have leftovers.
2. Heat Oil large pan on medium heat. Add garlic and onions and cook for about 3 minutes. Don't overcook!
