½ cup canola oil
2 eggs
3 Tbsp lemon juice (fresh-squeeze recommended)
½ cup white sugar
½ cup light brown sugar
½ tsp vanilla extract
5 oz evaporated milk
2 cups all-purpose flour
2½ tsp baking powder
½ tsp salt
1¼-1½ c. grated zucchini
zest of 1 lemon (~ 2 tsp)
