Lentil Loaf with Smokey BBQ Sauce

Lentils and quinoa are baked together with herbs and spices and topped off with a smokey and sweet bbq sauce. It is the ultimate comfort food. Not to mention super healthy!

½ c. brown lentils
? c. quinoa, uncooked
2¼ c. water
1 bay leaf
1 Tbsp. olive oil
½ onion finely chopped
1-2 jalapeno, diced
3 cloves of garlic, diced
½ c. carrots, grated
1 tsp. thyme
1 tsp. oregano
2 Tbsp. flaxmeal
1 Tbsp. worcestershire sauce
1 tsp. ground mustard
2 Tbsp. ketchup (brands matter, try and find a crap free ketchup here)
1½ Tbsp. Braggs Liquid Aminos (or soy sauce)
2 Tbsp. nutritional yeast
½-3/4 ground oats
BBQ Sauce:
¼ c. ketchup (same note as above, crap free brand)
1 tsp. chili powder
2 tsp. worcestershire sauce
½ tsp cayenne pepper
1 tsp. mustard
1-2 tsp. liquid smoke
