Light and Delicious Caprese Pasta Salad

Whether you’re looking for a salad that’s quick and easy to put together for a family gathering or you just want something light and flavorful for lunch, this caprese pasta salad is a great option. I’ve liked pasta salad since I was a kid. Back then, my favorite was the deli pasta salad with the tri-color rotini, black olives and the chunks of meat and cheese. The downside was that those pasta salads were always heavily doused in Italian dressing.
1 pound (1 box) fusilli or bow tie pasta
Handful of fresh basil leaves, sliced thin
2 cups grape tomatoes
1 pound fresh mozzarella
1/2 cup extra-virgin olive oil
Juice of 1 lemon
Salt and pepper to taste
