Light, Easy , and Fresh Coleslaw

1/2 Head of Green Cabbage thinly sliced into strips
2 Green onions, diced
1/2 Jalapeno, diced
2 Celery stalks, diced
1 Carrot, shredded
1/4 Cup chopped fresh parsley
1 Juice of 1 lemon
1/2 Cup Rice Wine Vinegar
1 Tbsp. Dijon mustard
1 Tbsp. minced garlic
Salt and Pepper to taste
In large serving bowl add sliced cabbage, dice green onion, jalapeno, and celery, shredded carrot, and parsley. Toss together. In small mixing bowl add the juice of 1 lemon, rice wine vinegar, dijon mustard and garlic, blend well. Add dressing to cabbage mixture and toss. Add generous amounts of pepper and salt to taste. Cover and let sit in refrigerator for at least an hour for the flavors to meld. Enjoy!
