Lightened Up Creamy Cajun Chicken Alfredo

When you hear Alfredo you instantly thing yum, how ever clearly it has like a bazzilion calories in it. Along with a ton of salt. So since I do make it often it was time to lighten things up a bit. Simply cutting out the heavy cream makes a world of difference and you wont even notice! You get the same creamy great tasting salt and a fraction of the calories.

4 boneless skinless chicken breast halves, cut into thin strips
2 tablespoons Cajun seasoning, I make my own
1 teaspoon olive oil
2 garlic cloves, minced
1 teaspoon butter
1 tablespoon all-purpose flour
1 1/3 cups, low-fat milk I use 2%
1 1/4 cups grated fresh Parmesan cheese, divided
2 tablespoons low fat cream cheese
1/2 teaspoon salt
2 teaspoons chopped fresh flat-leaf parsley
Cracked black pepper
1 box penne, cooked and drained
2 tablespoons Cajun seasoning, I make my own
1 teaspoon olive oil
