Low fat butternut and chicken bake

A delicious main meal that is low fat which has protein and vegetables

1/2 cup canned low fat cream of chicken condensed soup
1/4 cup fat free sour cream
1 teaspoon chopped garlic
2 cups peeled and sliced butternut squash
1 1/2 cups of chopped cauliflower
8 oz boneless chicken breast (skinless)
Salt depending on your taste
1 teaspoon chilli flakes
2 teaspoons of tomato purée
Fresh coriander and spring onion
1/8 teaspoon black pepper
Preheat oven to 375 degrees. Boil vegetables for about 5 minutes. In a large bowl, mix condensed soup, sour cream, garlic, tomato purée and chilli flakes. Stir in squash, cauliflower and onion. Season chicken with salt and pepper and mix in with the soup mixture. Pour in a casserole dish and cover with foil and bake for 35 minutes. Once out of the oven, then garnish with coriander and spring onions.
