Masala Rice

1. Basmati Rice - 1 cup
2. Green chillies - 4
3. Turmeric – ¼ teaspoon
4. Salt as per taste
5. Ghee - 1 tablespoon
6. Oil – 1 tablespoon
7. Bay leaves – 2 to 3
8. Lemon – 1
9. Ginger Garlic paste – 2 tablespoon
10. Onions Julienne - 1 big
11. Mint leaves - 1 cup finely chopped
12. Coriander leaves – 1 cup finely chopped
13. Clove – 4
14. Pepper – 4
15. Cardamom – 3
16. Cinnamon – 1 inch
17. Green peas (optional)
1. Put ghee and oil in pressure cooker. After it is heated, add Bay leaves, Clove, Pepper, Cardamom and cinnamon and allow it to splutter. 2. Add Onions and fry till golden brown. 3. Add ginger garlic paste and fry for 2 minutes. Add green peas. 4. Add finely chopped coriander and mint leaves and allow it to soften. 5. Add turmeric, salt and washed basmati rice and fry it for 2 to 3 minutes. 6. Add water in 1:2 proportion. Squeeze lemon and close pressure cooker lid. Let it whistle 3 times. 7. After pressure is gone, remove whistle and gasket. 8. It can be served with any non-veg gravy or curd raita.
