Meal Prep Bolognese with Zucchini Noodles! Healthy bolognese made with zucchini noodles & artichokes in 15 minutes. A classic recipe made over with simple ingredient swaps. EASY for meal prepping a healthy lunch or dinner. Gluten Free + Low Calorie + Paleo

1 lb. lean ground turkey breast
3 large zucchini ( spiralized )
1 tbsp. extra virgin olive oil
3 tbsp. minced garlic
1/2 cup white onion ( diced )
2/3 cup artichoke in water ( drained and quartered )
28 oz. jar diced tomatoes
6 oz. jar tomato paste
1/4 cup dry red wine
1 bay leaf
1 1/2 tbsp. Italian seasoning
to taste salt and pepper
  1. Heat a large skillet to medium heat. Add extra virgin olive oil, minced garlic and onion. Stir them together and sauté 2-3 minutes until the onions are tender.
