Roasted poblanos are stuffed with tasty rice, cheese, chiles, and spices in this #MeatlessMonday meal.

4 whole poblano peppers
2 cups brown rice, cooked
1 cup canned tomatoes
4 ounces green chiles
1 tablespoon chili powder
1 tablespoon ground cumin
1 teaspoon smoked paprika
1/8 teaspoon cayenne pepper
2 cups sharp cheddar cheese
1 cup egg substitute
