Mediterranean Meets Southwest Stuffed Chicken

A delicious combination of green chiles, olives and feta cheese flavors this chicken breast for a weekday lunch to go or for dinner.

1 Large Red Bell Pepper
2 Green Chiles
ΒΌ Cup of Feta Cheese
2 Tablespoons Nicoise Olives (Pitted and chopped)
1 Tablespoon Fresh Basil Minced (I used a frozen cube of basil)
4-8 6 ounce skinless, boneless chicken breast halves
Salt and Pepper to Taste
2 Green Chiles
ΒΌ Cup of Feta Cheese
2 Tablespoons Nicoise Olives (Pitted and chopped)
1 Tablespoon Fresh Basil Minced (I used a frozen cube of basil)
4-8 6 ounce skinless, boneless chicken breast halves

In the broiler, blacken the bell pepper and green chiles. Place them in a plastic bag for about 15 minutes until the skins just peels right off. Remove the seeds and stems. Chop them up.
