This carrot cake is moist and delicious and has the best of everything: carrots, dates, walnuts, and yes... even applesauce. Top with an out of this world White Chocolate Rum Ganache Glaze.

3 cups flour
1 cup sugar (3/4 if you want it a little less sweet)
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon cinnamon
1 1/2 cups vegetable oil
2 eggs
1 1/2 cups applesauce
2 cups carrots (peels and grated)
3/4 cup chopped dates
1 cup chopped walnuts
