Mexican Bake + Homemade Taco Seasoning

Have a craving for Mexican but want something a little healthier? Than makes this simple single serving meal. It's fast, easy and delicious. Plus it's topped with cheese, which makes it even better.

Mexican Bake:
1 cup black beans (drained and rinsed well)
1/3 cup of chunky salsa
1/2 cup of canned corn (drained)
1/2 cup of diced red pepper
1 1/2 tsp taco seasoning (recipe follows)
1/4 tsp of cayenne powder (use less or omit if you aren't a fan of spicy food)
1/4 cup of shredded cheddar cheese (if vegan, omit or top with vegan cheese)
Hot Sauce (optional)
Taco Seasoning:
2 tsp chili powder
1 tsp cumin
1 tsp cornstatch
1 tsp garlic powder
Salt to taste
